Pączki – Traditional Polish Doughnuts

Do you like doughnuts? Because I really do. They are appetite, delicious and fluffy sweets, full of marmalade and dust with powder sugar. In Poland, doughnuts are more popular as Pączki and traditionally people serve them on Fat Thursday or Tłusty Czwartek.

This year, Fat Thursday was on the 28th of February and I decided to surprise my Polish significant one with homemade Polish doughnuts.

It is not too hard to make homemade doughnuts and you can even decorate them using all of your imagination. Maybe the recipe below will look complicated to you. I tried to incorporated extra tips so you can make Pączki perfectly.

Ideas for decorating the Pączki

  1. Fill them with any kind of marmalade or Nutella creme.
  2. Prepare simple icing with powder sugar and water and dip the top of the doughnuts.
  3. Dust powder sugar on top of the doughnuts.
  4. Add sprinkles or orange zest.

Decorated Polish doughnuts

 250 ml Milk
 3 tbsp Sugar
 500 g Flour
 50 g Fresh yeast
 40 g Butter
 1 Egg
 4 Egg yolks
 2 tbsp Vodka or other alchohol without taste
  Pintch of salt
 1 tsp Vanilla sugar

Start with sifting the flour into a bowl. Add a pinch of salt and vanilla sugar.

Heat the milk - to be quite warm but not too hot. Put the yeast into a bowl together with 1 tablespoon of sugar and 1 tablespoon of flour. Pour the warm milk on top and mix well all ingredients. Keep for 10-15 minutes until the yeast mixture rise.

In a separate bowl add the egg yolks and the whole egg together with the 2 tablespoons of sugar. Use a hand mixer and beat the eggs for 10 minutes until they become a white fluffy foam.

Pour the yeast to the flour and mix with a wooden spoon. Add the egg mixture as well and start mixing the dough.

Pour some flour on a surface and transfer the dough. Start kneading the dough until it is not sticky to your hand.
Note: If the dough is too hard, add 1-2 spoons of warm milk to it and keep kneading.

When the dough is ready, add 2 tablespoons of vodka and the melted but not hot butter. Knead until all ingredients are completely combined.

Transfer the dough into a large bowl and cover with a clean cloth. Set aside in a warm place to rise for about 1-1 and 1/2 hours, until the dough significantly increases in volume.

When the dough is ready, pour some flour over your working surface. Knead the dough for 2-3 minutes to get rid of the bubbles in it.

Use a rolling pin to spread the dough (it should be thick around 2 cm) and cut pieces with a round glass.

Use the remaining dough to knead, cut and shape more doughnuts.

Cover the doughnuts with a cloth and set aside for 30-45 minutes to rise.

15 minutes before the end of rising the Pączki, put about 1 l oil in a deep pot and start to heat the oil (preferably long and slow) to 180 degrees. Prepare three plates lined with paper towels and a slotted spoon.

When the oil is heated put 3-4 doughnuts at a time and fry for 2 minutes on each side.

The outside of the pączki shouldn't get burn too fast because then in the middle the dough will be raw. During frying, adjust the oil temperature so that it does not increase or decrease drastically.

Take the doughnuts with the slotted spoon and put on paper to absorb some of the oil.

Decorate with icing, pour powdered sugar and fill the Pączki with strawberry jam.
