Easy Honey – Gingerbread Christmas Cookies

Hello my dear dreamers,
It is officially December and that means Christmas spirit is already here! I am so excited to share today with you my absolute favourite recipe for Easy Honey-Gingerbread cookies. 

The smell of ginger and cinnamon reminds me of my childhood when I was learning how to make these cookies at home with my mom. There are many many recipes online, but this one is in my top 5 cookies recipes. I am sure that everybody will like it because of the amazing Christmasy smell in the whole house. 

Throwback to Christmas at home in 2014

These Honey – Gingerbread cookies can be the perfect present for a close friend or a family member because everybody will appreciate the homemade taste and personal touch. Just put some of them in a nice jar and add a cute message. And if by any chance you make too many of these cookies… don’t worry, you can store them in a cookies jar or a box for around 10 days. 

And let me now to share the recipe for these super easy and aromatic cookies.

Gingerbread cookies

Ingredients
 125 g Butter
  cup Sugar
 ½ cup Raw honey
 1 Egg
 2 cups Flour
 ½ tsp Baking powder
 1 tsp Ground cinnamon
 ½ tsp Ground ginger
 ½ tsp Clove powder

Start with sifting the flour and the baking powder in a large bowl. Add the spices to the flour as well.

Mix the butter, sugar and honey in a separate bowl. Add the egg and whip the whole mixture until you get a creme consistency.

The next step is to add the creme mixture to the flour.

Mix the ingredients until you get a medium hard dough.

Cover the dough with a plastic foil and keep in the fridge for 1 hour.

After you take the dough from the fridge, pour some flour on the surface you will use. Roll the dough to a thickness of 1/2 cm. Cut circles with a glass or use cookie cutters.

Transfer the cookies in a tray covered with baking paper. Leave enough space in between because during the baking the cookies will expand.

Bake the cookies in a preheated oven of 180 degrees for maximum 10 minutes. If you leave them longer they will be very hard.

Now you can decide how to decorate them with jam, special colour icing or just enjoy them like this.
